This course is exclusively designed for those who want to study Culinary Arts & Bakery for SUNDAYS.

Introduction:

This course covers most of the areas that participants, Asian and European can use to start a food business and help to change the career. After 21 sundays, you can use kitchens for extra 4 sessions to research for product.

Week 1 (part 1): Basic Hygiene and Food Safety

Week 1 (part 2)  to Week 7 - 7 General Kitchen Operations

  • Mother Sauces
  • Soups
  • Vegetables
  • Pasta
  • Rice
  • Meat
  • Fish

Week 8 - 10 Kitchen and Restaurant Operations

  • Operating a Restaurant and Kitchen

Weeks 11** - 17 Basic Bakery and Pastry

  • Cakes
  • Cream Puddings
  • Bread
  • Pie Dough
  • Mousse
  • Fruit
  • Enriched Bread

Week 18 - 20** Kitchen and Restaurant Operations

  • Operating a Restaurant and Kitchen

** Week 21 Examinations

  • General Kitchen Black Box
  • Bakery Exam

Medium of Instruction: English

Tuition Fee:

  • HK$35,000
  • Miscellaneous Fee:
    • HK$1,500 (including basic equipment and uniform to keep)

Entry Requirements:

  • Basic English.

Tutors:

  • The school has a team of professional European and American tutors to provide professional training for students.

Award & Assessment:

  • Upon completion of all the lessons successfully, students will receive the "Diploma in Culinary Arts" from Hong Kong Culinary Academy.
  • Achieve 90% attendance or above in each Module
  • All modules combined must achieve 50% or above in average (does not include the industrial training)
  • For those who do not meet the English Language Entry Requirement (DSE English Language Level 2 or IELTS level 4.5), they have to attend an IELTS examination and reach level 4.5.

Notes:

  • Make-up class is not available in this course.

Further Studies:

Students who complete Sunday Diploma in Culinary Arts can enter directly into the 2nd Year of Advanced Diploma in Hotel Culinary Management (2 Years). Students must complete additional 4 modules in Year 2 as below.

  • Module 1: Food Safety and Occupational Safety and Health
  • Module 2: Communication and Report Writing Skills & Hospitality Sector
  • Module 3: Gastronomy
  • Module 4: Purchasing Management and Cost Control & Menu Studies

The tuition fee for each module is HK$8,300.
