European Sourdough Bread

Introduction:
Students can learn different methods of producing sourdough breads and their products.
Content:
Week 1 :
- Biga Sour Dough (make day before plus make in class)
- Wallnut Bread >> schedule for processing
- Sausage topped Whole Wheat Bun
- Sourdough Bread – dough for day two
- Process Sourdough Bread
- Calzone ‘Veggie’
- Banana-Okara Sourdough Muffin
- Theory, Use up Leftover Sourdough
Week 2:
- Rye Poulish (make in class plus make three days before)
- Sourdough Rye Bread
- Quiche Lorraine
- Sourdough Pancetta Bread, Dough
- Muesli Bread
- Rosemary Focaccia
- Stromboli w/ Mozzarella and Fennel
- Theory, Use up Extra Sourdough
Week 3:
- Black Cherry Crumble (Pastry Cream)
- English Muffins
- Baguettes Dough, process half / Cool half for day 2
- Process Baguettes
- Black Olive Ciabatta
- Flammkuchen (Alsatian Pizza)
- Muesli Bread
- Theory, Use of Extra Sourdough
Week 4:
- Pain a L’ancienne Dough
- Scones w/ Jam and Cream
- Sourdough Carrot Cake, Cream cheese Topping
- Process Pain a L’ancienne
- Sunflower Seed Bread (two hour Biga)
- Sourdough Pizza
- Prepare Sauce and Topping for Pizza
- Theory, Use up Extra Sourdough
PN: Day one will partly be used to do preparation for day two.
Remark: Theory content will be inserted during the class when there is a downtime.
Several products will be done over two days.
Some of the Sourdoughs will be done before the class to manage the time constrains - and requirement.
Small changes may be done if deemed necessary for a better flow or processing reason.
Late completion time might happen, as timing is a crucial factor in this class.

Over 35 years in the Culinary and Pastry experience. Born and certified as a Chef and Pastry Chef in Switzerland . After working in Switzerland - City, Lakeside and Mountains - Guernsey C.I., Bermuda, in the Carribbean on a Cruiseship, he came to Hong Kong to work for several 5 Star Hotels: Hilton, Furama, New World Harbourview.
Chef Heinz F. has been teaching with the academy ever since, he wishes to share his joy and passion to all students who are interested in the Culinary or Pastry field.

Introduction:
- Students can understand the basic pastry theory and get familiar with the basic baking technique. After completion of this course, students will acquire the basic cake baking skill.

Graduated in Culinary Arts, she specialized in European Cuisine and Management of Bars and Restaurants.
She has been in the F&B industry for over ten years. She has worked as a Head Chef in Brazil in Italian and Brazilian restaurants, Chef Consultant, Private Chef, Catering Services and as a Culinary Instructor.
She's currently living in Hong Kong since 2018, working in different places such as Black Sheep Restaurants, Louise (Michelin Star restaurant) and others.

- This course will focus on the basic bread baking techniques and their usage. Content includes: direct method, sponge-dough method, refrigeration method, etc... The course will also include the introduction of different yeasts and their usage. After completion of this course, students will be able to acquire the basic bread baking skills.

- This course will focus on the basic pie and tart baking techniques. Students will learn how to use different dough to make different flavor/style pie and tart. Students will also learn how to decorate and how to change the ingredients.
