- Students are required to pay chef uniform deposit of HK$402 (payable in cash) on the day of class:
- Chef uniform includes chef jacket (HK$300), apron (HK$50), heat shield (HK$30), soup fork (HK$10, no need to return) and chef hat (HK$12, non-refundable)

Introduction:

We will focus on dishes from France, Italy, Britain and Spain. Over 10 Saturdays you will learn the fundamentals of European cooking, starting with stocks and the 5 mother sauces. After that we will cook a 3-course meal daily for you to enjoy from all the corners of Europe.
Content:
Lesson 1
- Kitchen Safety and Hygiene
- Stocks. (Brown, white meat stocks, fish and vegetable)
- Knife Skills
- Pizza
Lesson 2
- Starter: Garlic Mushrooms served with in a creamy sauce with crispy bread
- Main: Pan fried Salmon with a saffron and Fennel Velouté served with Pomme Anna and courgette
- Dessert: Apple Tart tartan with Vanilla Ice cream
Lesson 3
- Starter: French onion soup
- Main: Roast duck breast with a duck leg croquette and a bitter Orange sauce
- Dessert: Chocolate Orange Souffle
Lesson 4
- Starter: Chicken Liver Pate with a red currant sauce
- Main: Coq Au Vin with fondant potato and buttered cabbage
- Dessert: Lemon Tart
Lesson 5
- Starter: Gazpacho. (cold Spanish soup)
- Main: Arroz Negro con Sepia. (Black rice with cuttlefish served with a Romesco sauce.)
- Dessert: Flan con leche. (Baked custard pudding with caramel top.)
Course Arrangement: 6 hours per lesson, total 5 lessons.
