This course is part of City & Guilds Assured Certificate in Food Business Start-up.

  • HK$9,100 ($7,100 for holders of Basic French Cookery Certificate)
  • Student needs to prepare the following items and deposit on the start day.
    • Deposit of chef uniform sets total $402
       (By cash, including chef jakcet($300), apron($50), big towel($30),spoon & fork ($10,no return) and chef hat($12,no return))
    • Two new kitchen clothes with different colours$12

Introduction:

Over the last 10 years, there have been more than hundreds of Basic French Cookery graduates asking for the continuation of the course.  With careful design, Heinz F. and the Academy is proud to present the Basic French Cookery II.  For those, who have completed the Basic French Cookery or are interested in learning more French Dishes, it is the opportunity now as this course is only held once a year.

  • Potato Gnocchi with Bacon + Gruyere

  • Consomme Julienne
  • Eggplant Mille Feuille, Red Bellpepper Sauce

  • Layered Tomato with Goat cheese and Air-dried Beef
  • Scallops + Champignon in Puff Pillow

  • White Asparagus Veloute (Cream Soup)
  • Cheese Souffle, Spinach Salad with Bacon Dressing

  • Beetroot Confit, Pigeon Eggs on Mesclun
  • Cordon Bleu, French Beans and Sable Potatoes

  • Crespelle with Zucchini and Ricotta
  • Lambchops on Mustard Sauce, Brussel Sprouts

  • Buffala Mozzarella with Pesto and Tomato Confit
  • Beef Stroganoff, Rosemary Roasted Potatoes, Sour Cream

  • Classic Lemon Tartlet, Strawberry Salsa
  • Flamed Sabayon w/ Oranges on Almond Sponge

  • Rhubarb Tart w/ Cinnamon Sauce, Vanilla Ice Cream

Course Arrangement: 3 hours per lesson, total 10 lessons.

Make-up:

Make-up classes are allowed but subject to prior approval, validity of proof of absence and availibility.
Make-up classes do not count as attendances.

Instructor:

  • Chef Teacher Heinz F.
    Over 35 years in the Culinary and Pastry experience. Born and certified as a Chef and Pastry Chef in Switzerland . After working in Switzerland - City, Lakeside and Mountains - Guernsey C.I., Bermuda, in the Carribbean on a Cruiseship, he came to Hong Kong to work for several 5 Star Hotels: Hilton, Furama, New World Harbourview.
    Chef Heinz F. has been teaching with the academy ever since, he wishes to share his joy and passion to all students who are interested in the Culinary or Pastry field.
Awards:
  • Students who achieve a minimum attendance of 75% may apply for "Attendance Certificate in Basic French Cookery II".  Award will be issued within 3 months.
