Introduction:

  • The objective of this course is to keep Brazilian cuisine alive in our homes. Even far from our land, those foods that taste homemade, full of affective memories can and should be part of our daily lives.

    These are easy-to-prepare dishes, with simple, everyday ingredients that nourish, soothe the heart and give pleasure.

    Gastronomy is an important element in our culture and an agent that preserves our cultural identity, bringing us closer to our distant homeland.

    If you're not Brazilian, this is the door-open opportunity to learn from the basics about our much-appreciated gastronomy, with a native Brazilian chef who has all the repertoire of flavors and ‘Brazilianness’ fine-tuned and ready to share with you. Welcome to the Brazilian kitchen!

  • O objetivo desse curso é manter a cozinha brasileira viva dentro de nossos lares. Mesmo longe de nossa terra, aquelas comidas com gosto de feito em casa, cheias de memorias afetivas podem e devem fazer parte de nosso cotidiano.

    São pratos de fácil preparo, com ingredientes simples e cotidianos, mas que alimentam, acalentam o coração e dão prazer.

    A gastronomia é um elemento importante na nossa cultura e um agente que preserva a nossa identidade cultural, e nos aproxima de nossa distante terra natal.

    Se você não é brasileiro, essa é a chance de aprender desde o básico sobre nossa tão apreciada gastronomia, com uma chef nativa brasileira que tem todo o repertorio de sabores e brasilidade afinados e pronto para dividir com você.

Content:

** Guidelines on kitchen safety, food hygiene, proper food storage, basic/classic vegetable cuts, basic cuts of meat (beef, chicken and fish) will be taught throughout the course.

** Orientações de segurança, higiene, armazenamento de alimentos, cortes básicos/clássicos de vegetais, cortes básicos de carnes (bovina, frango e peixe) serão ensinadas no decorrer de todo o curso.

Lesson (1)

DAILY MEAL 1 / DE TODO DIA 1

  • Presentation and introduction of Brazilian cuisine / Apresentação e introdução da culinária brasileira
  • ‘Fluffy’ white rice / Arroz Branco soltinho
  • Beans stew with full-bodied broth / Feijão com caldo bem encorpado
  • Brazilian vinaigrette / vinagrete (aquele do churrasco)
  • Steak with caramelized onions / Filé acebolado
  • Green leaves salad & dressing (Key-dressing for any salad. Have it ready and handy at your fridge) / Salada verde de folhas e tempero ‘tipo molhinho’ (vai com qualquer salada. Tenha sempre pronto na sua geladeira)

  • Moqueca baiana / Sea food Stew Bahia style
  • Breaded white fish with tartar sauce/ Iscas de peixe empanado com molho tártaro
  • Banana and dendê oil crumble / Farofinha de banana e dendê
  • Lime Caipirinha cocktail / Caipirinha

  • Braised pork ribs Minas style/ Costelinha mineira
  • Cassava ‘french fries’ / Mandioca frita
  • Chicken fricassèe  with homemade fried potato floss / Fricassê de frango com batata palha caseira

AFTERNOON TEA / PARA O CAFÉ DA TARDE

  • Sponge cake base (to flavor it as you fancy ) / bolo simples (base) de café da tarde (para ser saborizado como você desejar)
  • Brazilian style carrot cake with chocolate frosting / Bolo de cenoura com cobertura de chocolate ‘que quebra’
  • Granny's doughnuts /  Bolinho de chuva da vó
  • Brazilian style brewed coffee / Café de coador bem brasileiro

SAVOURY SNACKS / LANCHE DA TARDE

  • Cheese bread / Pão de queijo
  • Chicken tart with cream cheese / Empadão de frango com queijo cremoso
  • Swiss lemonade / Limonada Suiça

DESSERTS / SOBREMESA

  • Brazilian style lemon pie / Torta de limão
  • ‘The Perfect’ sweet condensed milk pudding/ Pudim de Leite condensado perfeito
  • Brazilian chocolate ball/ Brigadeiro (de colher e de enrolar)

Course Arrangement: 3 hours per lesson, total 6 lessons.
